VEGAN SLOPPY JOES BAKED SWEET POTATOES

Wow that's a long title! Wanna know how to make my famous baked sweet potatoes? Well, they're not that famous per say, just popular in the household! 😂 So good, so delicious and super quick & easy. Who knew baking a potato could be difficult and complex!? It can actually be quite tricky to crisp and season the skin just right , making sure that the inside is perfectly cooked, (not over cooked) soft and fluffy!

I paired this with a delicious topping, it is similar to a bolognese style sauce but without the red meat! I'm really not a huge fan of red meat, i didn't eat it much as a child and I'm trying to eat less meat slowly, slowly. I feel plant based is the way to go! Not just to protect the planet but for our diet and health.


 

Roasting sweet potatoes in the oven brings out their natural flavor and sweetness. There is no need to add syrup or marshmallows to them; they are perfectly sweet on their own. If you’re busy and working all day, it's so straight forward and there's no faffing around. Just whack them in the oven, set the timer and go an have a cuppa until the timer goes off.

Making a Baked Sweet Potato in the oven is so easy and comes out perfectly sweet and fluffy on the inside with this foolproof recipe.

 

Ingredients for Baked Sweet Potatoes:


  • 2 large sweet potatoes - Washed thoroughly (scrubbed well) and dried after with a paper town.

  • Drizzle of extra virgin olive oil

  • Sea salt

  • Freshly ground black pepper

  • Knob of butter


Ingredients for Vegan Sloppy Joe Topping:


  • 1 medium sized brown onion- peeled and diced into small pieces

  • 1 red pepper- washed, edges cut off, deseeded and diced into small pieces

  • 2 carrots- washed, peeled and grated

  • 2 tbsps of extra virgin olive oil

  • 1 packet (300gs) of quorn mince

  • 1 tbsp of garlic & ginger paste- levelled

  • 2 tsps of salt

  • 1/2 tsp of coarse black pepper

  • 3/4 tsp of paprika

  • 1/2 tsp of chilli flakes

  • 3 tbps of Worcester sauce

  • 400gs of passata

  • 2 tbsps of tomato ketchup

  • *Optional - grated cheddar cheese (vegan cheese can be used) to sprinkle on top


 

Method For Baked Sweet Potatoes:


1. Preheat oven to 220C/425F. On a baking sheet, (lined with foil for easy clean-up if you wish) prick the washed and patted dry sweet potatoes all over with a fork several times.


2. Drizzle the extra olive oil over both potatoes and rub in using your hands.



3. Sprinkle some sea salt and ground pepper over the top and whack it in the oven on the middle-lower shelf. Set timer for 25 mins and after about 5 mins begin to make the Sloppy Joe Mixture.


4. In a medium sized deep pan, add 2 tbsps of extra virgin olive oil and turn the gas onto a medium heat. Allow oil to heat and add in the diced onions.


5. After a few minutes add in the diced peppers and grated carrots. Cook for 5-7 mins stirring occasionally.


6. Add in the quorn mince, spices and Worcester sauce. Stir and add in passata and tomato ketchup. Stir, lower heat and cook for 25 mins with lid on. Stir occasionally.


7. When the timer goes off that means it time to turn over your beautiful potatoes (I used a pair of tongs to do this). Set timer for 20 mins and cook on opposite side.


8. After 20 mins the timer will go off again and it's time to take out your potatoes! Check with a table knife to see if it is fully cooked all the way through. Poke the thickest part of potatoes and of the knife does not stick and slides out with ease, they're read to be eaten!


9. The Sloppy Joe Mixture should be cooked by this point and is ready for dishing up!


10. Slice open potatoes and using a fork scrape the inside of the potato, creating a mash-like fluffy textre. Ddd a knob of butter in the middle, along with some sea salt and pepper.



11. Top with the Sloppy Joe Mixture (add grated cheese on top if you wish - tastes so good!) and serve with sides of your choice!


12. Enjoy!
