Gosh, this recipe has been so highly requested by you all! As some of you may know, on my Instagram i post daily meal pictures, a diary of my food if you will on my Instagram story. Well, i posted these homemade bounty bars a few weeks back and you guys just went crazy for them! I was immediately flooded with tons of lovely messages from you all requesting the recipe!
So humbled by the response to these bounty bars, so glad you all have enjoyed making them! I have certainly enjoying seeing them on your stories!
If you're wondering what I'm going on about, i posted this recipe weeks ago and my delightful blog had a system error and deleted a few of my posts! So here i am.. haha.. uploading it again!
Anyways, here they are! Delicious bounty bars! They taste better than the real thing, believe me!
What chocolate should i use
Simple answer, ANY chocolate you want! Bounty is typically made with milk chocolate of course, however i prefer the dark chocolate taste with these specific bounty bars as they don't seem to be as rich as a normal bounty!
So yes, entirely up to you! I have tried these with white chocolate are they are delicious! Very rich and definitional for you if you have a sweet tooth!

Chill Time: 2.5 hours

Ingredients:
200gs desiccated coconut
200gs condensed milk
1/2 tsp vanilla extract
300gs dark chocolate
Method:
1. Line a baking sheet or baking tray with parchment paper and set aside.
2. In a large mixing bowl, stir together the desiccated coconut with the condensed milk and the vanilla extract.
3. Next, shape and mold the mixture into bars. I like to use my hands when doing this. Carefully shaping them into small logs around 6-8cms long and 2-4cms wide, placing them each on the lined baking sheet.
Note: it helps to have a small bowl of water next to you for you to dip your hands in when doing this process, as the mixture can stick to your hands.
4. Once all the logs have been made from the mixture, place in the refrigerator for around 1-2 hours or until the logs seem 'firm'.
5. Once they have firmed up a little, you can take them out of the refrigerator and set aside.
6. Melt the chocolate in the microwave slowly (to prevent burning). I like to heat mine up for 1 minute, stir and then put back in for 30 seconds. I repeat this process untill all the chocolate is nice and melted!
7. Using two forks, dip in the chilled coconut log and coat the bar.
Note: be sure to use a fork as it will allow the chocolate to fall through when coating.
8. Once the bar is coated, allow to cool slightly forming a light crust on top. Using the back of a knife create 3 parallel lines on each bar, moving swiftly between them to create the iconic markings on top of the bars.
9. Once all the bars are coated and marked, place back into the refidgerator and chill for 30minutes-1 hour.
10. Enjoy!
Notes
Store in an airtight container at room temperature. As these are the same as any other chocolate bar, they don't need to be stored in the fridge.
Want to make these VEGAN? Simply replace the condensed milk with vegan condensed milk. Sorted.
