Oh this is an exiting one! If you have checked out my recipe for my 'TURKISH COLD MEZZES', then you will know how much i adore Turkish food and also saw this recipe coming! A great pairing for a classic Turkish mezze is the bread! I cant eat any cold mezze without some bread, who's the same? This bread is so simple to make and so straight forward. It's beautifully soft and tastes amazing!

Recipe
~ Makes 6-8 Servings ~
Prep Time - 1hr 15mins ~ Cook Time - 10-15 mins ~ Total Time - 1hr 25mins
Ingredients:
500gs of strong white flour
7gs (1 packet) of dried yeast
1 tsp of granulated white sugar
1 tsp of cooking salt
375mls of warm water
1 tbsp of extra virgin olive oil (plus extra to grease the bowl for rising)
2 tsps sesame seeds
1 teaspoon of black sesame seeds
1/2 tsps of sea salt flakes
1 egg yolk
Method
1. Combine flour, yeast, sugar and salt in a stand mixer (you can use a large mixing bowl if you don't have a stand mixer). Make a well in the centre, then add water. Using the paddle attachment and mix ingredients together (wooden spoon works just a fine to mix ingredients). When the mixture begins to stick and starts to look like the dough is coming togther, add the dough hook and knead the dough for about 8 minutes on speed 3 (you can use your hands to bring the dough together in the bowl and on a floured surface you can knead with hands also).
2. In a large mixing bowl, drizzle about 2 tbsps of extra virgin olive oil to grease. Round the dough into a ball and place in the bowl. Move the dough around the bowl, making sure that it is coated well. Cover with a piece of cling film and a warm tea towel and set in a warm place away from drafts for about an hour or, until the dough has doubled in size.
3. Preheat oven to 230°C/450°F. Place a baking tray on the middle shelf of the oven (the tray needs to be really hot before we put the dough on it) and leave inside to heat whist moving onto the next step.
4. Turn dough onto a lightly floured surface.
5. Cut in half and flatten slightly with hands. Place each half on separate pieces baking paper and with floured hands, stretch each piece into a rectangle no wider than the width of your pan.
6. Cover with a damp cloth and set in the same warm, draft-free place for about 15 minutes allowing the dough to rise some more.
7. Meanwhile, in a small bowl whisk egg yolk and oil and put to aside for later.
8. After 15 mins, remove the dough from the draft-free place. Using the end of a wooden spoon dipped in flour, poke a few holes in the bread that can collect some of the olive oil/egg yolk combination (be sure not to poke down to far, you don't want to create a hole. Just about half way down). Next, brush the top of each pide with egg and olive oil mixture . Combine sesame seeds and black sesame seeds and sprinkle over the top of each bread then sprinkle the sea salt flakes.
9. Remove tray from oven and slide 1 pide onto tray. Cook for 10-15 minutes or until golden brown. Cool on a wire rack. When you take the first bread off the baking tray, slide the 2nd one on and into the oven.
