Ingredients:

For the pretzels;

  • 500g plain flour, more or less as needed and extra for dusting

  • 480ml warm milk, i used oat

  • 1 & 1/2 tablespoons instant yeast

  • 50g brown sugar or white granulated sugar

  • 4 tablespoons butter, melted

  • 2 teaspoons salt

  • A drizzle of olive oil

For the topping;

  • 45g baking soda

  • 720ml warm water

  • 4 tablespoons butter, melted

  • 100g soft light brown sugar

  • 2 teaspoons cinnamon

Method:

1. In a large bowl or the bowl of a stand mixer, dissolve the yeast in the warm milk. When the mixture becomes 'frothy' mix in the brown sugar, butter, 150g flour, and salt, and mix until combined.

2. Add the remaining flour, a few tablespoons at a time, and mix until a smooth and slightly sticky dough forms.

3. Add a drizzle of olive oil to a large mixing bowl and add the dough mixture into he bowl. Cover in cling film and allow the dough to rise for one hour-2 hours, or until doubled in size.

4. After the dough has risen, preheat the oven to 230C/450F. Line two baking sheets with parchment paper and set aside.

5. Place the dough onto a lightly floured work surface. Divide the dough into twelve equal sized pieces (i weigh the entire dough first on a weighing scale, then divide by 12 and weigh each dough ball).

6. Roll each piece into a long skinny rope. Twist into a pretzel shape.

7. In a medium bowl, mix together the warm water and baking soda until dissolved. Dip each pretzel into the baking soda mixture and place on the prepared baking sheets. Bake 7 to 11 minutes, or until golden brown.

8. In a shallow dish, whisk together the sugar and cinnamon. Brush the pretzels with melted butter, then dip them in the cinnamon sugar mixture.

9. Enjoy! ☺️

Notes

  • Store in an airtight container at room temperature for up to 4 days.

  • These are best eaten on the day of baking, but can be revived by microwaving for 15-30 seconds, or putting into a hot oven for 2-3 minutes!
