Yummy and mouth-watering dates for that perfect snack, pick-me-up during the day or just to have as a healthy dessert. There are also perfect for Ramadan!
As many of you know, Ramadan is a time of the Islamic year when Muslims fast from sunrise to sundown. We typically open our fast with a date, but why not mix things up with these delicious Snickers Dates!
They taste so good, are so creamy and gooey on the inside and crunchy and crispy on the outside! Super quick, super easy and super simple!
Recipe
Luscious medjool dates, stuffed with peanut butter, dunked in semi-sweet chocolate and topped with mixed nuts!
Prep Time: 20-25 minutes
Cool Time: 1 hour
Total Time: 1 hour 25 minutes

Ingredients:
10 medjool dates
4 tablespoons smooth/crunchy peanut butter
100g dark chocolate
100g milk chocolate
5g coconut oil
2 tablespoons chopped nuts
Method:
1. Slice medjool dates down the middle using a sharp knife and carefully remove the pip.
2. Add your peanut butter into a piping bag and cut a small hole at the bottom. Pipe the peanut butter into the dates and close the dates tightly.
3. Add the chocolate and coconut oil into a bowl and heat in the microwave for 30 second intervals.
4. Using a toothpick, poke the dates and dip them carefully into the melted chocolate, and lay them on a baking sheet lined with parchment paper.
5. Sprinkle some chopped nuts on top and refrigerate for 1 hour.
6. Remove and enjoy immediately, or alternatively you can store them in an airtight container and keep in the fridge for up to 1 week!
Notes
I like to use semi-sweet chocolate chips so that the dates don't become too sweet!
