I wanted to create a snack that is packed with nutrients and full of proteins, fats and carbs! These Raspberry Energy Balls contain Maca Powder which have so many health benefits also! *see below.

Recipe
Cooling and refreshing raspberry energy balls covered in silky dark chocolate!
Prep Time: 15 minutes
Chill Time: 1 hour
Total Time: 1 hour 15 minutes

Ingredients
180g frozen raspberries
90g desiccated coconut
55g whole jumbo oats
1 tablespoon maca powder
15g honey
1 teaspoon vanilla extract
100g dark chocolate
15g coconut oil
Method
1. Begin by adding the frozen raspberries into a medium sized bowl. Microwave for 30 seconds the mash with a fork.
2. Add in the desiccated coconut, oats, maca powder and honey. Mix and form into 1 tablespoon sized balls.
3. Place the balls on a baking tray lined with parchment paper and freeze for for half an hour.
4. Once the balls are frozen, add the dark chocolate and coconut oil into a medium sized bowl and microwave until melted. I microwave for 30 seconds intervals.
5. Coat each ball generously with the melted chocolate and freeze for 30 minutes.
6. Enjoy!
Notes
Store in an airtight container and place in the freezer for up to 5 months.
