This soft and fluffy banana loaf is perfect for breakfast or to snack on throughout the day! It's not too sweet and pairs wonderfully with spreads and jams.
Nothing quite beats a bit if cake or bread and this loaf is a perfect combo of both. It has a delightful texture which makes you want to have more and more!
A yummy and wholesome baked good! Super quick, no fuss, chuck it all in a bowl and whisk together!

Soft and fluffy banana loaf! Perfect for breakfasts or to snack on throughout the day!

Ingredients
225g self raising flour
100g granulated sugar
100g unsalted butter, room temperature
2 ripe bananas
2 eggs
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
½ teaspoon salt
2 tablespoons milk
You'll also need..
A 900g (2lb) loaf tin, 17 x 9 x 9cm (6½ x 3½ x 3½in) base measurement.
Method
1. Pre-heat the oven to 175°C/350°F/Gas Mark 4.
2. Line your tin with parchment paper and spray cooking spray inside.
3. Using a hand whisk or a stand mixer with the whisk attachment added, add all of the ingredients into a bowl and whisk for 1 and ½ minutes.
4. Spoon the mixture into the prepared tin and level the surface.
5. Bake for 50-1 hour (depending on how hot your oven is), until well risen and golden brown. A fine skewer inserted in the centre of the cake should come out clean.
Note: I cooked my banana bread for 15 minutes at gas mark 4, then adjust the temperature to fan 175C.
6. Leave the cake to cool in the tin to cool completely before removing from the pan and slicing thickly.
7. Enjoy!
Notes
Store in an airtight container and eat within 3-4 days.
