Double Chocolate Protein Bites

I’m sure most of us get those sweet cravings throughout the day. Sometimes it’s not that easy to just grab a slice of cake or cookie. These energy bites take less than 30 minutes to make and are the perfect grab-and-go snack. Not to mention, they will definitely cure that sweet tooth.

They are packed with fiber, proteins, healthy fats, and simple, healthful ingredients.

You may not associate chocolate with a “health” food but a little dark chocolate on a daily basis won’t hurt you and it actually provides you with a dose of antioxidants, B vitamins, vitamin K, and much more. As I frequently say, it’s all about balance.

Total Time: 55 minutes

Servings: 16-17

Author: Zainab

Ingredients:

  • 200gs pitted dates

  • 80gs whole almonds

  • 30gs peanut butter protein powder (or any protein powder of your choice)

  • 40gs smooth cashew butter

  • 110gs rolled oats

  • 40gs ground almonds

  • 3 tablespoons cocoa powder

  • 60gs dark chocolate

  • 5gs coconut oil (or vegetable oil)

  • 3 tablespoons of water

Method:

1. In a medium bowl, soak the pitted dates in boiling water for 30 minutes.

2. To a food processor, add almonds, oats, almond flour, cocoa powder and protein powder. Blitz until it resembles a coarse flour texture.

3. Add cashew butter, dates and water. Process until mixture comes together and can be easily formed into a ball (add more water if needed).

4. Using a small cookie scoop to portion out the dough (or roughly 1 tablespoon size), roll into a smooth ball and transfer to a parchment lined baking sheet.

5. Place in the freezer for about 10-15 minutes.

6. In a small bowl, microwave chocolate and coconut oil in 30 sec intervals until melted.

7. Remove tray from the freezer and dip each ball into the melted chocolate and roll around to coat using a fork. Scoop up the ball with a fork and gently shake off any excess, transfer to the baking sheet.

8. Transfer to the freezer for a further 10-15 minutes to allow the chocolate to set.

9. Enjoy! :D
