This Everyday Fruit Cake, cooked in a loaf tin, is almost apologetically easy. Just weigh, stir and cook, which is just as well for me because itโs in great demand in our house. For special occasions, I will make something that takes more effort but, for everyday eating, this cake is perfect โ tasty, quick and easy.

Ingredients:
โ200gs of mixed dried fruit
62gs of unsalted butter, room temperature (little extra for greasing tin)
2 medium sized eggs
30mls of milk
1 rounded tbsp of jam (any flavour)
62gs of soft brown sugar, dark or light
125gs of self-raising flour, sifted
1 tsp of mixed spices (i used ground ginger, ground nutmeg and ground cinnamon

Method
Preheat the oven to 150C/300F/Gas Mark 3 and grease a 1.5lb loaf tin with butter or just pop spme parchment paper inside.
In a large mixing bowl or stand mixer add in the butter,sugar and eggs. Whisk together using an electric whisk (or hand whisk) until smooth. Add in the spices, milk and jam
Fold in the dried fruit to the mixture using a flat spatula. You don't want to break up the fruit so make sure this step is done slowly.
Carefully pour the mixture into the tin and use the spatula to level out the cake mixture.
Placing the cake into the oven on the middle-lower shelf in the oven,ย cook for 1 hour and 15 minutes and test with a toothpick. When it comes out clean the cake is done. If not, return to the oven and cook for a further 10 minutes and repeat.ย
Take the cake out of the oven and leave in the tin for 10 minutes before turning it out onto a wire rack to cool. Store in an airtight container and enjoy!
