WALNUT & CHOCOLATE CHIP BANANA BREAD

I have officially joined the hype! I was abit hesitant on posting this recipe, because lately there have been so many banana bread recipes being posted. But i thought why not! I'm sure you all would like to see my take on banana bread, so here it is. This banana walnut bread is perfectly fluffy, soft, and moist. It’s studded with chunks of walnuts and chocolate chips and has the perfect amount of sweetness.

What makes this recipe so good?


For starters, we swap in full-fat sour cream (don't even think about reaching for low-fat) instead of milk, which I find gives the banana bread a subtle tangy flavour and richer texture.

Instead of adding two eggs (traditional in most banana breads), we use one whole egg plus one egg yolk, which helps make the banana bread extraaa moist.

Recipe


~ Makes 12 Servings ~


Prep Time - 15 mins ~ Cook Time - 1 hour ~ Total Time - 1 hour 15 mins

 

Ingredients:


  • 2 cups (250gs) of plain flour

  • 1 tsp of baking soda

  • 1/2 tsp of salt

  • 1/2 cup (110gs) of unsalted butter, melted

  • 1 cup (200gs) of caster sugar

  • 1 large egg plus 1 egg yolk

  • 1/4 cup (60mls) of sour cream

  • 1 tsp of vanilla bean extract

  • 3 large ripe bananas (i only had 5 small ones so i used them), mashed

  • 1/2 cup (90gs) of milk chocolate chips

  • 1/2 cup (60gs) of chopped walnuts



 

Method:


1. Preheat oven to 175C/350F. Line a 1.5LB loaf tin with parchment paper and grease with cooking spray.


2. In a large bowl, whisk together flour, baking soda, and salt.



3. In another large bowl, mix together melted butter, sugar, egg and egg yolk, sour cream, and vanilla.



4. Add mashed bananas and stir until combined.



5. Gradually add dry ingredients to wet ingredients until just combined. Don't overmix and fold gently together.




6. Fold in chocolate chips and walnuts (one tbsp of each for sprinkling on top) and transfer to prepared loaf tin. Using a flat spatula spread out the mixture evenly and flat. Sprinkle the extra chocolate chips and walnuts on top.



7. Bake until a toothpick comes out clean, about 1 hour. Let cool 10 minutes in pan, then turn out onto a cooling rack to cool completely. Slice and enjoy!
